- 4 cloves garlic
- 1/2 teaspoon black pepper
- 1 teaspoon salt

For the Balado Spice Mix:
- 4 large red chilies
- 4 small red bird’s eye chilies (adjust to taste)
- 4 cloves shallots
- 1 tomato
- Salt and sugar to taste
- Optional: seasoning powder
Instructions:
-
Prepare the Ingredients:
- If using pre-cooked dendeng: Cut the dendeng into small, bite-sized pieces according to your preference.
- If making your own dendeng: Boil the beef until tender, slice it thinly, then pound it with a mortar and pestle or food processor with the seasoning mix. Fry the seasoned beef slices until crispy.
-
Fry the Potatoes and Dendeng:
- Heat oil in a frying pan and fry the potatoes until golden and crispy. Remove and set aside.
- In the same pan, fry the dendeng until crispy and well-cooked. Set aside with the potatoes.
-
Prepare the Balado Spice Mix:
- Roughly pound the red chilies, bird’s eye chilies, shallots, and tomato into a coarse paste using a mortar and pestle or a blender.
- Heat a small amount of oil in a pan and sauté the spice paste until fragrant and the oil starts to separate from the mixture.
- Add salt and sugar to taste. If using seasoning powder, add it now and adjust the seasoning as needed.
-
Combine and Cook:
- Add the fried potatoes and dendeng to the spice mixture. Stir well to coat all the pieces evenly.
- Cook for a few minutes, allowing the flavors to meld and the ingredients to heat through.
-
Serve:
- Once everything is well-combined and heated, transfer to a serving dish.
