Dendeng Basah: Savory Indonesian Beef Snack

Ingredients

  • Beef: Approximately ¼ kg (thinly sliced)
  • For Sautéing:
    • Chili: To taste
    • Tomato: 1, chopped
    • Red Onion: 4 cloves, finely chopped
    • Garlic: 3 cloves, minced
    • Cooking Oil: As needed
  • For Boiling Spices:
    • Coriander Powder: To taste
    • Turmeric Powder: 1 sachet
    • Black Pepper Powder: To taste
    • Lemongrass: 1 stalk
    • Kaffir Lime Leaves: 1
    • Bay Leaves: 1

Instructions

  1. Prepare the Beef:

    • Wash the beef thoroughly and slice it thinly to ensure quick and even cooking.
  2. Boil the Beef:

    • In a large pot, bring water to a boil. Add coriander powder, turmeric powder, black pepper powder, lemongrass, kaffir lime leaves, bay leaves, and salt to the boiling water.
    • Once the water is boiling, add the sliced beef. Cook until the beef is tender, which usually takes about 1-2 hours depending on the thickness of the slices.
  3. Fry the Beef:

    • After the beef has reached tenderness, remove it from the pot and drain well.
    • Heat some cooking oil in a pan over medium heat. Fry the beef slices until they are cooked through and slightly crispy, but not completely dry.
  4. Prepare the Sauté Ingredients:

    • While the beef is frying, roughly grind the chili, tomato, red onion, and garlic together. The texture should be coarse rather than finely ground.
  5. Sauté the Ingredients:

    • In a separate pan, heat some cooking oil. Add the coarsely ground mixture and sauté until fragrant and the oil begins to separate from the mixture.
    • Add a small amount of the beef broth (from the boiling process) to the pan. Let it cook until the liquid reduces slightly.
  6. Combine and Season:

    • Add the fried beef slices to the sautéed mixture. Stir well to combine.
    • Season with salt, a pinch of sugar, and a bit of chicken or beef seasoning powder, if desired. Taste and adjust the seasoning according to your preference.
  7. Finish Cooking:

    • Allow the mixture to cook for a few more minutes, letting the flavors meld together. Ensure that the beef is well-coated with the sautéed mixture.
  8. Serve:

    • Once everything is well combined and the flavors are balanced, remove from heat. Serve the Dendeng Basah warm as a delicious and savory snack or side dish.
