Sapi Lada Hitam (Black Pepper Beef)

Sapi Lada Hitam, or Black Pepper Beef, is a savory and aromatic dish renowned for its rich, spicy flavors and tender beef. This Indonesian recipe, infused with bold spices and savory sauces, makes a hearty and satisfying meal that’s perfect for any occasion. Here’s how you can create this delightful dish:

Ingredients:

  • 500 grams (1/2 kg) beef (sirloin or tenderloin), thinly sliced
  • 2 tablespoons black peppercorns, finely ground
  • 8 cloves garlic, coarsely chopped
  • 1 large onion, finely chopped
  • 2 tablespoons teriyaki sauce
  • 10 tablespoons oyster sauce
  • 6 tablespoons sweet soy sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons margarine (optional)
  • 8 large green chilies or 2 green bell peppers, sliced
  • 1 thumb-sized piece of ginger
  • 1 sachet of mushroom or beef bouillon powder (optional)
  • 1 tablespoon whole black peppercorns
  • Salt, to taste
  • 800-1000 ml water
  • Cooking oil, as needed

Instructions:

  1. Prepare the Marinade:

    • For the marinade, blend together 5 cloves of garlic, ginger, salt, 1 tablespoon of whole black peppercorns, 5 tablespoons sweet soy sauce, 5 tablespoons oyster sauce, 1 tablespoon bouillon powder (if using), and 3 tablespoons soy sauce. Blend until smooth and set aside.
  2. Marinate the Beef:

    • Rinse the beef slices thoroughly to remove any blood or impurities. Place the beef in a large bowl and pour the prepared marinade over it. Mix well, ensuring the beef is evenly coated. Cover and marinate in the refrigerator for about 1 hour. For the best results, marinate the beef for a longer time to allow the flavors to penetrate deeply.
  3. Cook the Beef:

    • Heat a generous amount of cooking oil in a frying pan or wok over medium heat. Add the chopped onion, remaining garlic, and finely ground black peppercorns. Sauté until fragrant and the onions are translucent.
  4. Add the Beef:

    • Add the marinated beef along with the marinade to the pan. Stir-fry until the beef starts to brown and the marinade begins to caramelize.
  5. Incorporate the Sauces:

    • Pour in the water and add the remaining oyster sauce, sweet soy sauce, and soy sauce. Stir well and bring to a boil. Reduce the heat to low and let it simmer until the sauce thickens and the beef is cooked through, about 30-45 minutes.
  6. Add Chilies and Adjust Seasoning:

    • Once the sauce has reduced and thickened, add the sliced green chilies or bell peppers. Continue to cook until the peppers are tender and the sauce is almost dry. Taste and adjust the seasoning as needed, adding more salt, sweet soy sauce, or oyster sauce if necessary.
  7. Finishing Touches:

    • If using margarine, stir it in at the end of cooking for a rich, glossy finish.
  8. Serve:

    • Serve the Sapi Lada Hitam hot with steamed rice or noodles.

Enjoy the robust flavors and satisfying textures of this Indonesian classic. Perfect for a special dinner or a hearty family meal, Sapi Lada Hitam is sure to become a favorite in your culinary repertoire.
