Daging Sapi Balado: Spicy Indonesian Beef

Ingredients:

  • Beef: 250 grams, thinly sliced

For Boiling Beef:

  • 3 cloves of garlic
  • 1 teaspoon coriander
  • Salt to taste

For Balado Spice Mix:

  • 4 large red chilies
  • 5 bird’s eye chilies
  • 5 shallots
  • 2 cloves of garlic
  • A small amount of palm sugar
  • Bay leaves
  • Lemongrass
  • Salt to taste
  • Sugar to taste
  • 1 Maggie stock cube

Preparation Steps:

  1. Prepare the Beef:

    • Thinly slice the beef. Boil it in water mixed with crushed garlic, coriander, and salt. Add bay leaves and lemongrass for extra flavor. Continue to boil until the beef is tender and the water has reduced significantly.
  2. Make the Balado Spice Mix:

    • Grind the red chilies, bird’s eye chilies, shallots, and garlic to a semi-coarse consistency. Avoid making it too smooth.
  3. Cook the Beef:

    • Once the beef is tender, remove it from the pot and flatten it using a mortar. Then, quickly fry the beef in hot oil for a brief moment. Do not fry it too dry to retain its juiciness.
  4. Prepare the Balado Sauce:

    • Heat oil in a pan until hot, then sauté the ground balado spice mix until fragrant. Add salt, sugar, and the Maggie stock cube. Pour in some of the beef broth from the boiling process.
  5. Combine and Serve:

    • Add the fried beef into the pan with the balado sauce. Stir well until the beef absorbs the spices. Once done, remove from heat and serve hot.
