Bakso Sapi Kuah (Indonesian Beef Meatball Soup)
Ingredients:
- 500 grams ground beef
- 300 grams beef for the broth
- 6 tablespoons tapioca flour
- 1 teaspoon baking powder
- 2 tablespoons beef broth powder
- Salt, to taste
- Pepper, to taste
- 2 eggs
- 2 stalks green onions, finely chopped
- 5 cloves garlic, finely ground
- 1 shallot, finely ground

Prepare the Meatball Mixture:
- In a large mixing bowl, combine the tapioca flour, baking powder, salt, pepper, ground garlic, ground shallot, and beef broth powder. Mix thoroughly.
- Add the ground beef and the eggs to the bowl. Mix until the ingredients are well combined and the mixture becomes smooth and elastic.
- Cover the mixture and refrigerate for 1-2 hours to firm up.

Prepare the Broth:
- While the meatball mixture is chilling, start preparing the broth. Heat a bit of oil in a large pot over medium heat.
- Sauté the remaining garlic and shallot until fragrant.
- Add 2 liters of water to the pot. Season with salt, pepper, and beef broth powder to taste.
- Cut the beef for the broth into bite-sized pieces and add them to the pot. Let the broth simmer until the beef is tender and flavorful. Adjust the seasoning as needed.

Shape and Cook the Meatballs:
- Remove the meatball mixture from the refrigerator. Using a spoon, shape the mixture into balls of your desired size.
- Bring a separate pot of water to a boil. Once boiling, reduce the heat to a gentle simmer.
- Drop the meatballs into the simmering water. They are ready when they float to the surface. Use a slotted spoon to transfer the cooked meatballs to the broth.

Combine and Finish the Soup:
- Add the cooked meatballs to the broth, letting them simmer for a few minutes to absorb the flavors.
- Sprinkle in the chopped green onions and let them soften slightly in the hot broth.
- Taste and adjust the seasoning one final time.

- Turn off the heat and serve the Bakso Sapi Kuah hot, with a side of steamed rice or noodles if desired.
