Japchae with Beef Korean Noodles 🍝
Ingredients
- 200 g glass noodles (bihun/soun), soaked in hot water
- 200 g beef, thinly sliced
- 1 carrot, julienned
- Sufficient quantity of wood ear mushrooms, sliced
- 1 onion, sliced
- 1 red bell pepper, julienned
- 1 green bell pepper, julienned
- 1 stalk green onion, chopped
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- Sweet soy sauce to taste
- Mushroom broth powder to taste
- Sugar to taste
- Sesame seeds for garnish
Instructions

Marinate the Beef:
- In a bowl, combine the thinly sliced beef with 2 minced garlic cloves, a small piece of ginger, sugar, salt, pepper, and soy sauce. Mix well and let it marinate while preparing other ingredients.

Prepare the Noodles:
- In a large bowl, mix the soaked glass noodles with sesame oil, soy sauce, sweet soy sauce, mushroom broth powder, and sugar. Toss to coat the noodles evenly and set aside.

Cook the Vegetables and Beef:
- Heat a little oil in a large skillet or wok over medium-high heat. Sauté the remaining minced garlic and sliced onion until fragrant.
- Add the julienned carrot, bell peppers, and sliced wood ear mushrooms. Stir-fry until the vegetables begin to soften.
- Add the marinated beef to the skillet and cook until the beef changes color and is cooked through.

Combine and Finish:
- Add the prepared noodles to the skillet, stirring continuously to combine all the ingredients and distribute the flavors evenly.
- Lastly, add the chopped green onion and give it a quick toss to mix everything together.
- Remove from heat.

Serve:
- Transfer the Japchae to a serving dish and garnish with a generous sprinkle of sesame seeds.
- Serve immediately and enjoy your delicious homemade Japchae with beef!
