Soto Sapi / Soto Seger / Soto Bening

Ingredients:

  • 300 grams beef
  • 6 cloves garlic
  • 4 shallots
  • 1 teaspoon coriander seeds
  • 2 teaspoons nutmeg powder
  • 1 teaspoon pepper
  • 2 bay leaves
  • 4 kaffir lime leaves
  • 2 cm galangal, bruised
  • 2 cm ginger, bruised
  • 1 stalk lemongrass, bruised
  • Sugar, salt, mushroom broth powder to taste

Garnishes:

  • Celery leaves
  • Green onions
  • Fried shallots
  • Lime wedges

Instructions:

  1. Cook the Beef:
    Begin by boiling the beef until it is tender. Once cooked, remove the beef from the pot and cut it into small cubes. Set the beef aside and keep the broth.

  2. Prepare the Spice Paste:
    In a food processor or mortar and pestle, blend the garlic, shallots, coriander seeds, and pepper into a smooth paste.

  3. Sauté the Spices:
    Heat a small amount of oil in a pan over medium heat. Sauté the spice paste until it becomes fragrant. Add the kaffir lime leaves, bay leaves, galangal, ginger, and lemongrass to the pan. Continue to sauté until the spices release their aromas.

  4. Combine with Broth:
    Pour the sautéed spice mixture into the pot with the beef broth. Add the cubed beef back into the pot. Season with sugar, salt, and mushroom broth powder to taste. Bring the soup to a boil and let it simmer to blend the flavors.

  5. Final Adjustments:
    Taste the soup and adjust the seasoning if necessary. Once the flavors are balanced, turn off the heat. Add the chopped celery leaves, fried shallots, and green onions into the pot. Stir to combine.

  6. Serve:
    Serve the Soto Sapi hot with steamed rice and bean sprouts on the side. Garnish with additional fried shallots and a squeeze of fresh lime juice to enhance the flavor.
