- 1/4 kg beef brisket, cut into pieces
- 10 meatballs (optional, if available)
- 1 bay leaf
- 1 kaffir lime leaf
- Cooking oil
- 4 cm galangal, smashed

- Sweet soy sauce, to taste
- Beef bouillon powder and salt, to taste
- A small amount of palm sugar
- For the Spice Paste:
- Red chili peppers (curly and bird’s eye), to taste
- 4 cloves garlic
- 9 shallots
- 2 cm ginger

Begin by boiling the beef brisket until tender. For the best result, discard the first batch of boiling water to remove impurities, then reboil the beef in fresh water. Reserve some of the broth for use as stock later.

In a pan, heat some cooking oil over medium heat. Add the sliced onion and sauté until it becomes soft and translucent.

Add the spice paste (made from blending the red chili peppers, garlic, shallots, and ginger) to the pan along with the smashed galangal, bay leaf, and kaffir lime leaf. Continue to cook, stirring frequently, until the spices become fragrant and the raw smell diminishes.

Incorporate the boiled beef brisket into the pan, and if using, add the meatballs. Pour in a little of the reserved beef broth, then season with beef bouillon powder, sweet soy sauce, salt, and palm sugar. Adjust the seasoning according to your taste.

Cook until the liquid reduces and the sauce thickens. Taste and adjust the seasoning if necessary.

Once the sauce has thickened and the flavors have melded, transfer the dish to a serving plate. If desired, garnish with whole bird’s eye chilies for an extra kick.
