Red Bean Soup with Beef Ribs

Ingredients:

  • 250 grams red beans (senerek)
  • 1/4 beef ribs (balungan/tetelan sapi)
  • 3 cloves garlic
  • 5 shallots
  • Nutmeg to taste
  • Black pepper to taste
  • Cooking oil for sautรฉing
  • Seasoning (to taste)
  • 5 tablespoons capri beans (similar to peanuts in Java)
  • 5 stalks green onions
  • 5 stalks celery
  • 4 carrots
  • Salt to taste
  • Water (as needed)
  • Palm sugar to taste

Instructions:

  1. Prepare the Red Beans:

    • Soak the red beans overnight to soften. After soaking, wash them thoroughly and then cook in boiling water until slightly tender.
  2. Prepare the Aromatics:

    • Crush the garlic, black pepper, nutmeg, and salt together into a paste.
    • Slice the shallots thinly and fry them until golden brown.
  3. Cook the Soup Base:

    • Heat a small amount of cooking oil in a pot. Sautรฉ the garlic paste until fragrant, then add a sufficient amount of water to create a broth.
    • Add the beef ribs to the pot and cook until they start to become tender.

    • Once the beef ribs are somewhat cooked, add the pre-cooked red beans to the pot.
    • Incorporate the sliced carrots and continue to cook until all ingredients are tender and the flavors meld together.

    • Add the capri beans, green onions, celery, and fried shallots. Stir well to combine.
    • Adjust the seasoning with salt, palm sugar, and any additional seasoning to taste.
