Ingredients:

- 1/2 kg beef, cut into bite-sized cubes
- 1500 ml water (for boiling)
- 1 stalk lemongrass, smashed
- 5 kaffir lime leaves
- 4 bay leaves
- 1 sachet beef-flavored seasoning (such as Royco)
- 1 tablespoon granulated sugar
- 1 teaspoon salt

For the Spice Paste:
- 6 shallots
- 4 cloves garlic
- 1 thumb-sized piece of turmeric
- 2 candlenuts
- 1 cm ginger
- 1 cm galangal
- 1 teaspoon ground black pepper

For Garnishing and Serving:
- 1 bunch scallions, sliced (about 1 cm pieces)
- Fresh cilantro (optional)
- Fried shallots
- 1/3 cabbage, sliced thinly
- 1/4 cup rice vermicelli (corn vermicelli can be used as an alternative)
- Tomatoes, sliced (to taste)
- Sweet soy sauce
- Lime wedges
- Chili paste or sambal (to taste)
Instructions:

Prepare the Beef:
- Rinse the beef thoroughly and cut it into small cubes according to your preference.
- In a large pot, bring 1500 ml of water to a boil and add the beef. Let it simmer for about 30 minutes or until the beef is tender.

Prepare the Spice Paste:
- While the beef is cooking, grind the shallots, garlic, turmeric, candlenuts, ginger, and galangal into a fine paste. You can use a mortar and pestle or a food processor for this task.

Cook the Spice Paste:
- In a separate pan, heat a little oil over medium heat. Add the ground spice paste to the pan and sauté until fragrant.
- Add the kaffir lime leaves, bay leaves, and smashed lemongrass to the pan. Continue to cook for a few minutes, allowing the spices to release their flavors. Pour in a small amount of the beef broth (from the boiling beef) to deglaze the pan.
