Stir-Fried Pokchoi with Beef and Oyster Sauce
Ingredients:
- 150 grams pokchoi (baby bok choy)
- 2 tablespoons finely minced ground beef
- 5 cloves garlic, coarsely chopped
- 1 small onion, thinly sliced
- 1 stalk green onion, chopped
- 5 red chili peppers
- 1 tablespoon oyster sauce
- 1/2 tablespoon cornstarch
- Salt, to taste
- Sugar, to taste
- Black pepper, to taste
- Water, as needed
- Toasted sesame seeds, for garnish
Instructions:

Prepare the Pokchoi:
- Bring a pot of water to a boil, adding a pinch of salt and a splash of oil. Blanch the pokchoi in the boiling water for about 1 minute. Remove and set aside.

Cook the Aromatics:
- In a skillet or wok, heat a small amount of oil over medium heat. Sauté the coarsely chopped garlic and thinly sliced onion until fragrant and golden.

Add the Beef:
- Add the finely minced ground beef to the skillet. Season with salt, sugar, and black pepper. Stir and cook until the beef is browned and cooked through. Add a splash of water if needed to help the beef cook evenly.

Incorporate the Sauce:
- Stir in the oyster sauce, green onion, and red chili peppers. Mix well to combine all the flavors.

Thicken the Sauce:
- In a small bowl, dissolve the cornstarch in a bit of water to create a slurry. Add this slurry to the skillet, stirring continuously until the sauce thickens and coats the beef and vegetables evenly.

- Pour the beef mixture over the blanched pokchoi. Garnish with toasted sesame seeds for a finishing touch.
