Ayam Kampung Krebek Kuning

Ayam Kampung Krebek Kuning is a traditional Indonesian dish featuring free-range chicken cooked with aromatic spices and herbs. This recipe combines the rich flavors of garlic, shallots, and chili with the earthy notes of lemongrass and galangal, resulting in a fragrant and flavorful chicken dish that’s perfect for a special meal. Here’s how you can prepare this delicious recipe:

Ingredients:

  • 1 whole free-range chicken (ayam kampung)
  • 3 stalks of lemongrass
  • 1 piece of galangal (lengkuas)
  • 1 bay leaf (daun salam)
  • Tamarind (asam jawa) to taste
  • Whole red chilies (cabe rawit utuh) to taste

For the Spice Paste (Bumbu Halus):

  • 4 cloves of garlic (bawang putih)
  • 6 shallots (bawang merah)
  • 3 large red chilies (cabe merah besar) – adjust to taste
  • 4 candlenuts (kemiri)
  • A piece of ginger (jahe)
  • A piece of turmeric (kunyit)

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken thoroughly and drain well. Pat dry with paper towels.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the garlic, shallots, red chilies, candlenuts, ginger, and turmeric. Blend until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a large pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.
  4. Add Aromatics:

    • To the pan, add the lemongrass stalks, galangal, bay leaf, and tamarind. Continue to sauté for a few more minutes until the spices are well blended and aromatic.
  5. Cook the Chicken:

    • Add the chicken pieces to the pan and stir to coat them well with the spice mixture. Cook for a few minutes until the chicken is no longer raw and has absorbed the flavors.
  6. Add Liquid and Simmer:

    • Pour in enough water to cover the chicken. Bring to a boil, then reduce the heat to low. Simmer gently until the chicken is tender and the liquid has reduced, leaving a thick, flavorful sauce. This usually takes about 45 minutes to 1 hour, depending on the size of the chicken pieces.
  7. Final Touches:

    • Taste the dish and adjust the seasoning as needed. If desired, add whole red chilies for extra heat.
  8. Serve:

    • Once the chicken is tender and the sauce has thickened, remove from heat. Serve hot with steamed rice or your favorite side dishes.

Enjoy your Ayam Kampung Krebek Kuning, a delightful and aromatic dish that brings a touch of Indonesian cuisine to your table. Happy cooking! 😊
