Stir-Fried Beef and Broccoli

Ingredients:

  • 250 grams thinly sliced beef
  • 1 head of broccoli, cut into florets
  • 3 red curly chilies, sliced
  • 1/2 tomato, chopped
  • 1 shallot, sliced
  • 3 cloves garlic, sliced
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt, sugar, and black pepper to taste
  • Cornstarch
  • Water

Instructions:

  1. Prepare the Aromatics:
    Heat a splash of oil in a large skillet or wok over medium heat. Add the sliced shallots and chopped tomato, sautéing until they are nearly cooked through.

  2. Add Garlic and Chilies:
    Toss in the sliced garlic and red chilies. Continue to stir-fry until the garlic is fragrant and the chilies are slightly wilted.

  3. Cook the Beef:
    Introduce the thinly sliced beef into the skillet. Stir-fry until the beef is fully cooked and browned.

  4. Simmer:
    Pour in enough water to cover the beef. Bring to a simmer and cover the pan. Allow the mixture to cook until the water starts to reduce.

  5. Add Broccoli:
    Add the broccoli florets to the skillet. If needed, add a bit more water to ensure there is enough liquid for the broccoli to cook. Cover and cook until the broccoli is tender.

  6. Season:
    Stir in the oyster sauce, sesame oil, salt, sugar, and black pepper. Adjust the seasoning to taste.

  7. Thicken the Sauce:
    In a small bowl, mix a teaspoon of cornstarch with a little water to create a slurry. Add this mixture to the skillet and stir well to thicken the sauce.

  8. Serve:
    Once the sauce has reached your desired thickness and the flavors are well balanced, remove from heat. Serve hot over rice or noodles.
