Nasi Kebuli Sapi
Ingredients:
- 4 cups of rice (beras)
- 500 grams beef (cut into small pieces)
- 5 cardamom pods
- 3 cloves
- 3 star anise
- 1 cinnamon stick (broken into pieces)
- 12 shallots (sliced thinly)
- 6 cloves garlic (crushed and minced)
- 5 tablespoons coconut milk
- 2 tablespoons tomato sauce
- 1 tablespoon curry powder
- Salt, sugar, and beef bouillon powder to taste
- Sufficient water
- Ground Spice Mix:
- 1/2 nutmeg
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon black pepper
Instructions:

-
Prepare the Rice: Wash the rice thoroughly and soak it in water for 5 minutes, then drain.
-
Prepare the Beef: Rinse the beef pieces and drain well.
-
Sauté the Aromatics: Heat a little oil in a pan. Sauté the shallots, garlic, ground spice mix, cloves, cinnamon stick, star anise, and cardamom pods until fragrant.
-
Cook the Beef: Add the beef to the pan and cook until it changes color. Stir in 1 tablespoon of curry powder.
-
Add Liquids and Seasonings: Pour in enough water to cover the beef, then add the tomato sauce, coconut milk, salt, sugar, and beef bouillon powder to taste. Since you’ll use the remaining liquid to cook the rice, ensure there’s enough liquid in the pot.
-
Simmer and Fry the Beef: Once the beef is tender, remove it from the pot and set it aside. Fry the beef pieces until they are crispy and golden brown. (Note: You can use chicken instead of beef if desired.)
-
Cook the Rice: Use the remaining beef broth to cook the rice. Adjust the amount of broth according to the rice quantity; if there’s too much broth, reduce it, and if too little, add more. Add the washed rice to the pot.
-
Steam the Rice: Steam the rice until it is fully cooked and tender.
-
Serve: Serve the Nasi Kebuli with the crispy fried beef and garnish with crispy fried shallots.
Enjoy the aromatic and flavorful Nasi Kebuli Sapi, a dish that beautifully combines the rich spices and tender beef with perfectly cooked rice.
