Stir-Fried Bitter Melon with Beef in Oyster Sauce (Non-Bitter) – ArKitchen Style
Ingredients:
- 3 medium-sized bitter melons (150 grams)
- 150 grams beef, cut into strips
- 3 large bird’s eye chilies (adjust to taste)
- 3 shallots
- 1 garlic clove
- A pinch of shrimp paste
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 2 tablespoons oyster sauce

Prepare the Bitter Melon:
- Slice each bitter melon in half lengthwise and scrape out the seeds. Cut the melon into thin slices, but not too thin.
- Sprinkle 1 teaspoon of salt over the sliced bitter melon and gently massage it to release the bitter juices. Rinse under cold water, sprinkle with salt again, massage, and rinse. Repeat this process three times to reduce the bitterness.

- Cut the beef into bite-sized strips or cubes according to your preference.

Make the Spice Paste:
- Blend or grind the shallots, garlic, shrimp paste, and bird’s eye chilies into a fine paste.

- Heat a pan and add a bit of oil. Sauté the spice paste until it becomes fragrant.
- Add the beef strips to the pan and cook until browned.
- Incorporate the prepared bitter melon into the pan. Season with sugar, salt, beef bouillon powder, and oyster sauce. Stir well.
- Pour in about 5 tablespoons of water, mix thoroughly, and allow the mixture to cook until the bitter melon becomes tender.
