  • 1/2 kg chicken (cut into pieces)
  • 1 tablespoon Royco seasoning (or similar all-purpose seasoning)
  • Salt, to taste
  • 1 teaspoon ground black pepper
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 1 cup Kobe crispy flour (or any preferred crispy flour)

Instructions:

  1. Prepare the Chicken:

    • Begin by rinsing the chicken pieces under cold running water until they are thoroughly clean. Pat them dry with paper towels.
  2. Season the Chicken:

    • In a mortar and pestle or food processor, grind the minced garlic with a pinch of salt and ground black pepper until it forms a paste.
    • Mix this garlic paste with the Royco seasoning and lime juice. Rub this mixture evenly over the chicken pieces, ensuring each piece is well-coated.
    • Place the seasoned chicken in the refrigerator and let it marinate for a few hours. This allows the flavors to penetrate and the lime juice to neutralize any strong odors.
  3. Prepare for Frying:

    • After marinating, take the chicken out of the refrigerator. Prepare a bowl of ice-cold water.
    • Place the Kobe crispy flour in a separate bowl. Dredge each piece of marinated chicken in the flour, ensuring a thorough coating.
    • Dip the floured chicken pieces one by one into the ice-cold water, then re-coat with the flour. This double coating helps achieve extra crispiness.
  4. Fry the Chicken:

    • Heat a generous amount of oil in a deep frying pan or pot until it reaches around 350°F (175°C). The oil should be enough to fully submerge the chicken pieces.
    • Carefully add the coated chicken pieces to the hot oil. Fry them over medium-low heat to ensure they cook through and develop a crispy, golden-brown exterior.
    • Continue frying until the chicken is crispy and cooked through, usually about 10-15 minutes depending on the size of the pieces. Make sure to turn the chicken occasionally for even cooking.
  5. Drain and Serve:

    • Once cooked, remove the chicken pieces from the oil and place them on a plate lined with paper towels to drain excess oil.
