Stuffed Green Squash with Ground Beef: A Greek-Inspired Recipe

Ingredients:

  • 6 medium green squashes
  • 1/2 kg ground beef
  • 8 tablespoons sushi rice (or a similar sushi rice variety)
  • 2 onions
  • 4 garlic cloves
  • 1 bunch of parsley
  • Vegetable oil
  • Salt
  • Black pepper
  • Cornstarch
  • 1 egg yolk
  • 1 lemon

Instructions:

  1. Prepare the Squash:
    Begin by thoroughly washing the green squashes. Slice them as shown in the accompanying image, and scoop out the flesh into a large bowl. Sprinkle a bit of salt over the scooped-out squash flesh and set it aside. Remember not to discard the tops of the squash, as you will use them later as lids for the stuffed squash.

  2. Prepare the Ingredients:
    Wash the parsley, onions, and garlic. Also, rinse the sushi rice.

  3. Make the Filling:
    Blend the scooped-out squash flesh until smooth. Finely chop the onions and garlic. Heat a frying pan with vegetable oil and sauté the onions and garlic until they become fragrant. Remove from heat and add the blended squash flesh, sushi rice, chopped parsley, and ground beef to the pan. Mix well, and season with salt and black pepper to taste.

  4. Stuff the Squash:
    Place the prepared green squashes upright in a pot. Stuff each squash with the beef mixture you just prepared. Place the tops back on the squash to cover them. Pour hot water into the pot, ensuring it does not exceed the tops of the squash.

  5. Cook the Squash:
    Cover the pot and cook over medium heat for approximately 1 hour.

  6. Add a Greek Touch (Optional):
    For a richer, thicker result, you can incorporate a Greek touch known as “avgolemono.” To prepare this, mix the juice of one lemon with the egg yolk and 1 teaspoon of cornstarch. Whisk until smooth. Pour this mixture into the pot while the squash is still hot, stirring quickly. Be careful to add it while the dish is hot and remove from heat almost immediately for the best texture.

  7. Serve:
