Chicken and Glass Noodle Soup (Sup Ayam Soun)

This heartwarming Chicken and Glass Noodle Soup, known as “Sup Ayam Soun,” combines tender chicken with a medley of vegetables and delicate glass noodles in a flavorful broth. This recipe will guide you through creating a comforting and nutritious meal that’s perfect for any occasion.

Ingredients:

  • 250 grams of chicken bones or meat, cut into desired pieces
  • 2 carrots, sliced and cut into desired shapes
  • 100 grams of cabbage, chopped

  • 2 tomatoes, quartered
  • 1 thumb-sized piece of ginger, crushed
  • 1 small onion, thinly sliced
  • 6 cloves of garlic, minced

  • 1 small pack of glass noodles (soun)
  • Water, as needed
  • Salt, sugar, pepper, and chicken stock powder, to taste
  • Oil, for sautéing

Instructions:

  1. Prepare the Aromatics:
    Begin by heating oil in a pan. Sauté the minced garlic, sliced onion, and crushed ginger until fragrant. Add ground pepper and nutmeg. Continue sautéing until the aromatics are well-cooked and aromatic. Remove from heat and set aside.

  2. Cook the Chicken:
    In a large pot, bring water to a boil. Add the chicken pieces and cook until the chicken changes color. This initial step helps to remove impurities and set the base for the soup.
