Beef Sausage Fondue with BBQ and Mushroom Sauces

Ingredients:

For the Fondue:

  • 200 grams beef sirloin, cut into cubes
  • 3 sausages, sliced into bite-sized pieces
  • 1 tablespoon butter

For Marinade:

  • Salt
  • Black pepper
  • Garlic powder
  • Olive oil
  • Parsley, chopped
  • Rosemary, chopped

For BBQ Sauce:

  • 1 onion, finely chopped
  • 2 tablespoons butter
  • Sweet soy sauce
  • Tomato ketchup
  • Worcestershire sauce
  • Salt
  • Black pepper

For Mushroom Sauce:

  • 1 cup milk or cooking cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Fresh parsley, chopped
  • 200 grams champignon mushrooms, sliced

Instructions:

  1. Marinate the Meat and Sausages:

    • In a bowl, combine salt, black pepper, garlic powder, olive oil, parsley, and rosemary. Add the beef cubes and sausage slices to the marinade, making sure they are well-coated. Set aside and let them marinate for at least 30 minutes.
  2. Prepare the BBQ Sauce:

    • Heat 2 tablespoons of butter in a pan over medium heat. Add the finely chopped onion and sauté until golden brown.
    • Stir in a generous amount of sweet soy sauce, and cook until the mixture starts to bubble. Be careful not to let it burn.
    • Add a good amount of tomato ketchup and a tablespoon of Worcestershire sauce. Season with salt and black pepper to taste. Stir well and let the sauce simmer for a few minutes until it thickens. Taste and adjust the seasoning if necessary. Set the sauce aside.
  3. Make the Mushroom Sauce:

    • In another pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
    • Add the sliced champignon mushrooms and cook until they start to soften.
    • Pour in the milk or cooking cream and bring it to a gentle simmer. Gradually stir in the shredded cheddar cheese until it melts smoothly into the sauce.
    • Add the grated Parmesan cheese and stir until fully incorporated. Season with salt and pepper to taste. Adjust the consistency if needed by adding more cream or cheese. Set the sauce aside.
  4. Prepare Additional Sauces:

    • As optional additions, you can prepare a bottle of store-bought chili sauce and Thai sauce for extra variety. Set these aside.
  5. Cook the Beef and Sausages:

    • Heat a pan over medium-high heat. Add the marinated beef and sausages to the hot pan. There’s no need to add extra butter or oil, as the meat has already been marinated with olive oil.
    • Sauté the meat and sausages until they reach your desired level of doneness. Add the butter towards the end of cooking for added richness. Stir well to coat the meat and sausages evenly with the melted butter.
  6. Serve:

    • Arrange the cooked beef and sausages on a platter. Serve with the BBQ sauce, mushroom sauce, and any additional sauces you prepared.
    • For a complete meal, consider serving the fondue with crispy fries or your favorite side dishes.
