Himmel und Erde: A Delightful German Side Dish

Description: I whipped up this delightful German side dish for a Thanksgiving party hosted by our German club, and it was a hit with everyone! To simplify things, you can use precooked bacon. For a touch of tartness, consider cooking 3-4 cubed Granny Smith apples with the potatoes. This dish is best enjoyed warm, and its comforting flavors are sure to please.

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients:

  • 4 large potatoes, peeled and cubed
  • 1 tablespoon sugar
  • 4 slices bacon, diced
  • 1 onion, finely chopped
  • 1 tablespoon butter
  • 1/2 teaspoon ground nutmeg

Instructions:

  1. Prepare the Potatoes: Begin by placing the cubed potatoes in a large pot and covering them with salted water. Bring the water to a rolling boil over medium-high heat.

  2. Cook the Potatoes: Once boiling, add the sugar to the pot. Reduce the heat to a simmer, cover, and cook the potatoes until they are tender, which should take about 10 to 15 minutes. Once cooked, drain the potatoes and set them aside.

  3. Cook the Bacon: While the potatoes are cooking, heat a skillet over medium heat. Add the diced bacon and cook until it becomes crispy. Once done, remove the bacon from the skillet and let it drain on a paper towel to remove excess fat.

  4. Sauté the Onion: In the same skillet used for the bacon, cook and stir the chopped onion in the remaining bacon fat until it is tender and translucent. This will infuse the onions with the delicious flavor of the bacon.

  5. Assemble the Dish: Transfer the cooked potatoes to a serving bowl. Dot the potatoes with butter and sprinkle with ground nutmeg for a warm, aromatic flavor.

  6. Finish with Bacon and Onion: Top the potatoes with the crispy bacon and sautéed onions. Give everything a gentle mix to combine the flavors.

Tips:

  • For a slightly different flavor profile, you can cook cubed Granny Smith apples along with the potatoes. Their tartness pairs beautifully with the sweet and savory elements of this dish.
  • Ensure that the bacon is crispy for the best texture and flavor contrast.
