Pepes Ayam: A Simple and Flavorful Indonesian Delight

Ingredients:

  • 1/4 chicken (preferably chicken breast)
  • 7 shallots
  • 1 clove garlic
  • 1/2 inch turmeric root
  • A small piece of galangal
  • A small piece of ginger
  • 2 candlenuts
  • 2 medium tomatoes (or tamarind if preferred)
  • Chili peppers (to taste, for those who enjoy spicy dishes)
  • Fresh basil leaves
  • Banana leaves for wrapping

Instructions:

  1. Prepare the Chicken:
    Begin by cleaning the chicken thoroughly and cutting it into pieces as desired.

  2. Prepare the Spice Paste:
    In a food processor or mortar and pestle, grind the shallots, garlic, turmeric, galangal, ginger, and candlenuts into a smooth paste.

  3. Combine Ingredients:
    Mix the tamarind with the spice paste. Add the chili peppers if you like a bit of heat in your dish.

  4. Wrap the Chicken:
    Clean the banana leaves and cut them into pieces large enough to wrap the chicken. Place a portion of the spice mixture onto the center of each banana leaf. Lay the chicken pieces on top of the spice mixture, and then cover the chicken with the remaining spice paste.

  5. Steam the Chicken:
    Fold the banana leaves over the chicken to enclose it completely. Steam the wrapped chicken for about 15 minutes, or until the chicken is fully cooked and infused with the flavors of the spices.

  6. Serve and Enjoy:
    Unwrap the banana leaves and transfer the chicken to a serving platter. Garnish with fresh basil leaves. Enjoy this aromatic and flavorful dish with steamed rice or as a part of your meal.
