Ayam Geprek with Kosek Sambal

Ingredients:

  • 2 to 4 pieces of fried chicken (I used Kemiri fried chicken)
  • 9 to 15 red bird’s eye chilies
  • 5 to 7 green bird’s eye chilies
  • ½ teaspoon salt
  • 3 cloves garlic
  • 1 teaspoon leftover hot oil from frying the chicken

Instructions:

  1. Prepare the Sambal:

    • In a mortar and pestle (cobek), combine the red and green bird’s eye chilies, salt, and garlic. Grind coarsely to create a sambal paste.
    • Heat the leftover oil from frying the chicken and pour it over the sambal mixture. Stir well to combine.
  2. Assemble the Dish:

    • Place the fried chicken pieces onto a serving plate.
    • Gently smash or crush the chicken into the sambal using the back of a spoon or a similar tool. Ensure the sambal is spread over and around the chicken.
    • Spoon additional sambal over the top of the chicken.
  3. Serve:

    • This sambal will keep its flavor for an entire day and adds a delicious kick to your fried chicken.
