Tongseng Daging Sapi Without Coconut Milk
Ingredients:
- 3/4 kg beef, cut into bite-sized pieces
- Shredded cabbage, as needed
- 1 stalk lemongrass, smashed
- 1 tomato, cut into wedges
- Chopped leek, as needed
- Sweet soy sauce (kecap manis), to taste
For the Spice Paste:
- 5 shallots
- 4 cloves garlic
- 3 candlenuts
- 1 teaspoon ground coriander
- 1 teaspoon ground pepper
- 2 cm ginger
- 2 cm turmeric
- Salt, to taste
- Cooking seasoning, to taste

Prepare the Spice Paste: In a blender or food processor, blend together the shallots, garlic, candlenuts, ground coriander, ground pepper, ginger, and turmeric into a smooth paste. Adjust with salt according to your taste.

Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the smashed lemongrass and continue to cook until the paste is aromatic.
