Tongseng Daging Sapi Without Coconut Milk

Ingredients:

  • 3/4 kg beef, cut into bite-sized pieces
  • Shredded cabbage, as needed
  • 1 stalk lemongrass, smashed
  • 1 tomato, cut into wedges
  • Chopped leek, as needed
  • Sweet soy sauce (kecap manis), to taste

For the Spice Paste:

  • 5 shallots
  • 4 cloves garlic
  • 3 candlenuts
  • 1 teaspoon ground coriander
  • 1 teaspoon ground pepper
  • 2 cm ginger
  • 2 cm turmeric
  • Salt, to taste
  • Cooking seasoning, to taste

Steps:

  1. Prepare the Spice Paste: In a blender or food processor, blend together the shallots, garlic, candlenuts, ground coriander, ground pepper, ginger, and turmeric into a smooth paste. Adjust with salt according to your taste.

  2. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the smashed lemongrass and continue to cook until the paste is aromatic.

  3. Add Liquid: Pour in enough water to cover the mixture, stirring well to combine.

  4. Add Beef: Introduce the pre-cooked and cut beef into the pan. Let it simmer until the beef is tender and the flavors are well absorbed.

  5. Incorporate Vegetables: Once the beef is tender, add the shredded cabbage, tomato wedges, and chopped leek. Stir gently to mix.

  6. Season: Add salt, cooking seasoning, and sweet soy sauce to taste. Continue cooking until everything is well combined and the dish has reached your desired consistency.

  7. Serve: Once the dish has simmered and the vegetables are cooked, transfer to a serving dish. Garnish with fried shallots for added flavor and crunch.
