This hearty and flavorful Indonesian beef rib soup, known as Sop Iga Sapi, is a comforting dish perfect for a family meal. The combination of tender beef ribs and a medley of vegetables, seasoned to perfection, creates a rich and satisfying soup. Here’s how you can recreate this delicious recipe at home:

Ingredients

  • 1 kg beef ribs (tulang iga sapi)
  • 250 g carrots, peeled and cut into chunks
  • 100 g green beans (buncis), trimmed and cut into pieces
  • 250 g cauliflower (bunga kol), cut into florets
  • 5 cloves garlic, minced
  • 5 shallots, minced
  • 1 stalk green onion (daun bawang), chopped
  • 1 stalk celery (daun seledri), chopped
  • 1 large red tomato, chopped
  • Salt, to taste
  • Sugar, to taste
  • Ground black pepper, to taste

Instructions

  1. Prepare the Beef Ribs:

    • Begin by boiling the beef ribs in a pressure cooker until they are partially tender. Once cooked, remove the ribs and drain them, discarding the cooking water.
  2. Prepare the Aromatics:

    • While the beef ribs are cooking, finely mince the garlic and shallots. These will be added later to enhance the soup’s flavor.
  3. Cook the Soup Base:

    • Return the beef ribs to a pot with fresh water. Bring to a boil and cook until the meat is tender and the broth is rich.
  4. Add Vegetables:

    • Once the beef is tender, add the carrots to the pot. Allow them to cook until they are halfway tender.
    • Next, add the green beans and cook until they are tender.
    • Finally, incorporate the cauliflower and cook until all vegetables are tender and well-integrated with the soup.
  5. Season the Soup:

    • Season the soup with salt, sugar, and ground black pepper according to your taste preferences. Adjust the seasoning as needed to balance the flavors.
  6. Finish the Soup:

    • When the vegetables are nearly done, add the chopped green onions, celery, and tomato to the pot. Allow the soup to simmer for a few more minutes to let the flavors meld together.
  7. Serve:

    • Once the soup is well-seasoned and all ingredients are cooked through, remove from heat. Serve hot, and enjoy a bowl of comforting Indonesian beef rib soup.

This recipe yields a rich and savory soup that’s perfect for a cozy meal with family or friends. The tender beef ribs combined with the fresh vegetables and aromatic herbs create a dish that’s both nourishing and delightful. Enjoy your homemade Sop Iga Sapi!
