Ayam Pop Kuah (Healthy Diet Recipe)

Ingredients:

  • 400 grams chicken breast (skin removed)
  • 5 shallots
  • 2 garlic cloves
  • 3 bird’s eye chilies
  • A small piece of ginger (about the size of the tip of your pinky finger)
  • 1 stalk lemongrass, bruised
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 1 scallion
  • 1 sachet beef-flavored seasoning (e.g., Royco)
  • Salt and sugar to taste
  • Water

Instructions:

  1. Prepare the Chicken: Begin by rinsing the chicken breasts thoroughly. To reduce the fat, bring a pot of water to a boil. Add the chicken, one sliced shallot, a pinch of salt, and a few torn kaffir lime leaves. Boil until the chicken is fully cooked and no blood remains in the meat. Discard the water.

  2. Second Boil: Drain the chicken and discard the water. Refill the pot with fresh water and bring it to a boil again.

  3. Prepare the Spice Paste: Wash all the spices and ingredients well. Slice the garlic, shallots, and chilies. Cut a small piece of ginger. Combine these with a pinch of salt in a mortar and grind into a smooth paste. If you don’t have a mortar, you can use a food processor.

  4. Cook the Spices: Add the ground spice paste to the boiling water with the chicken. Toss in the bruised lemongrass, bay leaf, and torn kaffir lime leaves. Tear the scallion into pieces and add it to the pot as well.

  5. Season: Season with salt, sugar, and the beef-flavored seasoning according to your taste. Allow the mixture to simmer until the flavors meld and the soup is fragrant.

  6. Final Touch: Once the soup is boiling and well-seasoned, your healthy Ayam Pop Kuah is ready to be served. This dish is flavorful, low in fat, and does not require any additional oil.

  7. Serve and Enjoy: Ladle the soup into bowls and enjoy this healthy, oil-free dish.
