Balinese Shredded Chicken with Spicy Sambal Matah

Ayam Suir Sambal Matah Khas Bali

Ingredients:

  • 1/5 kg chicken breast (preferably fillet for ease of shredding)
  • 6 cloves red shallots
  • 4 stalks lemongrass
  • 1 piece of torch ginger (kecombrang)
  • 15 red chilies
  • Sugar, to taste
  • Salt, to taste
  • Royco seasoning, to taste
  • Shrimp paste (terasi)
  • Cooking oil
  • Kaffir lime leaves
  • Lime juice (from 1 lime)

Steps:

  1. Begin by seasoning the chicken breast with a pinch of salt. For a more manageable preparation, it’s best to use chicken fillet, which makes shredding easier. Heat oil in a pan and fry the chicken until thoroughly cooked and golden brown.

  2. While the chicken is frying, prepare the other ingredients. Thinly slice the red shallots, lemongrass, red chilies, and torch ginger. For the lemongrass and torch ginger, chop them finely after slicing to enhance their texture and flavor in the final dish.

  3. Once all the ingredients are sliced, combine them in a bowl. Add a touch of salt, sugar, and Royco seasoning to taste. Squeeze in the juice of one lime to add a fresh tangy note to the mixture.

  4. Heat some cooking oil in a pan and fry the shrimp paste until fragrant. Pour this hot oil and shrimp paste mixture over the combined ingredients in the bowl. Stir everything together until well mixed and evenly seasoned.

  5. Shred the cooked chicken into bite-sized pieces and add it to the bowl. Gently toss to combine all the ingredients, ensuring the chicken is well coated with the sambal mixture.

  6. Taste the sambal matah and adjust the seasoning if needed. Once everything is perfectly balanced, your Ayam Suir Sambal Matah is ready to be served.
