Tongseng Daging Sapi: A Flavorful Indonesian Beef Stew

Ingredients:

  • 1/4 kg beef, cut into bite-sized pieces
  • Carrots, thinly sliced (quantity as desired)
  • Tomatoes, cut into quarters (quantity as desired)
  • Green onions, sliced diagonally
  • Cabbage, cut into large chunks
  • 5 shallots
  • 3 cloves garlic
  • 3 curly chilies
  • 3 candlenuts
  • 1/2 teaspoon black pepper
  • 1 teaspoon coriander seeds
  • 1/2 inch ginger
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 teaspoon palm sugar
  • 2 stalks lemongrass, bruised
  • 250 ml coconut milk
  • 1 small glass water

Instructions:

  1. Prepare the Spice Paste: Begin by blending the shallots, garlic, curly chilies, candlenuts, ginger, coriander seeds, and turmeric powder into a smooth paste.

  2. Cook the Spice Paste: Heat a little oil in a large pot or Dutch oven over medium heat. Add the spice paste and sauté until fragrant, about 3-5 minutes.

  3. Simmer the Beef: Add the beef pieces to the pot and cook until browned on all sides. Pour in the water and bring to a boil. Reduce the heat and let it simmer until the beef becomes tender.

  4. Add the Coconut Milk: Once the beef is tender, stir in the coconut milk and lemongrass. Allow the mixture to simmer gently for about 10 minutes.

  5. Incorporate Vegetables: Add the carrots, cabbage, tomatoes, and green onions to the pot. Cook until the vegetables are tender, about 10-15 minutes.

  6. Season the Stew: Taste the stew and adjust the seasoning with salt and palm sugar as needed. Stir well to combine all flavors.

  7. Serve and Enjoy: Serve the Tongseng Daging Sapi hot, with steamed rice or as a standalone dish.
