Beef Gulai Recipe: A Rich and Flavorful Indonesian Delight

Ingredients:

  • 1 kg beef, cut into bite-sized pieces
  • Water for boiling the beef
  • 2 stalks lemongrass
  • 4 kaffir lime leaves
  • 3 soursop leaves
  • 2 bay leaves
  • 3 cm galangal, sliced
  • 3 cm ginger, sliced
  • 1/2 tsp turmeric powder
  • 65 ml Kara coconut milk
  • 1/2 tsp milk powder
  • 4 cloves
  • Spice Paste:
    • 12 shallots
    • 6 garlic cloves
    • 1/2 tsp nutmeg powder
    • 1/2 tsp ground black pepper (adjust to taste)
    • 1/2 tsp ground cumin
    • 1 tsp ground coriander
    • 10 red chilies (adjust to taste)
    • 6 candlenuts
  • Salt, sugar, and seasoning to taste
  • Cooking oil for sautéing
  • To Serve:
    • Ketupat (rice cakes) or warm rice

Instructions:

  1. Prepare the Beef:

    • Boil the beef pieces in water until they are half-cooked. Remove from heat, drain, and cut the beef into pieces according to your preference.
  2. Cook the Spice Paste:

    • Heat some oil in a pan. Sauté the spice paste ingredients—shallots, garlic, nutmeg powder, black pepper, cumin, coriander, red chilies, and candlenuts—until aromatic and slightly browned.
  3. Combine Ingredients:

    • Add lemongrass, kaffir lime leaves, soursop leaves, bay leaves, galangal, ginger, and cloves to the pan with the spice paste. Stir-fry until the spices are well-combined and fragrant.
  4. Add Beef and Coconut Milk:

    • Pour in the water from the beef boiling process and the coconut milk. Mix well. Add the beef pieces back into the pan along with milk powder.
  5. Season and Simmer:

    • Season with salt, sugar, and seasoning to taste. Stir to ensure the coconut milk does not separate. Cook over low heat until the sauce thickens and the beef is tender. Adjust seasoning as needed.
  6. Serve:

    • Once cooked and the flavors have melded, remove from heat. Serve warm with ketupat or rice.
