Ayam Penyet Kemangi Recipe

Ingredients:

  • 250 grams chicken (cooked as usual and then deep-fried until golden brown)
  • Fresh kemangi (Thai basil) to taste
  • 6 shallots
  • 3 cloves garlic
  • 1 ripe tomato
  • 10 green chilies
  • Salt, to taste
  • Sugar, to taste
  • MSG (optional, to taste)
  • Shrimp paste (optional)
  • Cooking oil for sautéing

Instructions:

  1. Prepare the Aromatics:
    Begin by finely chopping the shallots, garlic, and tomato. Slice the green chilies.

  2. Sauté the Ingredients:
    Heat a small amount of cooking oil in a pan over medium heat. Sauté the shallots, garlic, tomato, and green chilies until they become fragrant and soft.

  3. Make the Sambal:
    Transfer the sautéed ingredients into a mortar and pestle. Add salt, sugar, and if desired, MSG and shrimp paste. Grind the mixture until it becomes a smooth sambal paste.

  4. Combine with Chicken:
    Take the fried chicken and place it into the mortar with the sambal paste. Gently mash and mix the chicken with the sambal until well-coated and combined.

  5. Add Kemangi:
    Tear the fresh kemangi leaves and add them to the mortar. Continue to gently mash and mix until the kemangi is evenly distributed throughout the chicken.

  6. Serve:
    Transfer the ayam penyet kemangi to a serving dish. Enjoy it warm with a side of steamed rice for a truly delightful meal.
