Chicken Blackpepper Recipe

Ingredients:

  • 5 chicken wings (cut into halves to make 10 pieces)
  • Cooking oil (for frying the chicken)
  • For the Sauce:
    • 2 cloves garlic, finely chopped
    • 1 small red onion, finely chopped
    • 1/2 onion, sliced
    • 1/2 tablespoon oyster sauce (adjust to taste)
    • 1 tablespoon black pepper powder (adjust to taste)
    • 1/2 tablespoon white pepper powder (adjust to taste)
    • Sweet soy sauce (to taste)
    • Water (as needed)
    • A small amount of oil (for sautéing)
    • A small amount of cornstarch (for thickening the sauce)

Instructions:

  1. Prepare the Chicken:

    • Begin by thoroughly washing the chicken wings and then patting them dry with paper towels. Season the wings with salt and white pepper, ensuring they are well-coated. Allow the chicken to rest for about 5 minutes.
    • Heat a sufficient amount of oil in a frying pan over medium heat. Once hot, fry the chicken wings until they are partially cooked. This initial frying ensures that the chicken cooks evenly throughout when combined with the sauce later.
  2. Prepare the Sauce:

    • In a separate pan, heat a small amount of oil over medium heat. Add the finely chopped red onion, garlic, and sliced onion. Sauté until the onions are fragrant and golden brown, taking care not to burn them.
    • Add the partially cooked chicken wings to the pan with the sautéed onions. Stir in the oyster sauce, black pepper, and white pepper. Adjust the seasoning with sweet soy sauce according to your taste preference.
    • Pour in enough water to cover the chicken wings, then bring the mixture to a gentle simmer. Allow it to cook, stirring occasionally, until the sauce has reduced and the chicken wings are nicely browned and fully cooked.
  3. Thicken the Sauce:

    • To thicken the sauce, dissolve a small amount of cornstarch in a bit of water. Slowly add this mixture to the pan while stirring constantly. Continue to cook until the sauce has thickened to your desired consistency.
  4. Serve:

    • Once the sauce has reduced and thickened, remove the pan from heat. Transfer the chicken wings to a serving dish and spoon the thickened sauce over them.
