Sweet and Spicy Chicken Wings ala Wida

Ingredients

  • 500 grams chicken wings (cut into 3 parts and discard the wing tips)
  • 1-2 packets Kentucky-style breading mix (or make your own flour mixture)
  • 5-6 tablespoons sweet chili sauce
  • 2 tablespoons chili sauce
  • 1 tablespoon tomato ketchup
  • 1-2 cloves garlic (crushed and finely chopped)
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon cornstarch (diluted with a little water)
  • Salt (to taste)
  • Sugar (to taste)
  • Cooking oil (for frying)
  • Optional garnish: chopped celery or fried shallots

Instructions

  1. Prepare the Chicken Wings:

    • Wash the chicken wings thoroughly and cut them into three parts, discarding the tips. Pat dry with paper towels.
  2. Breading the Chicken:

    • Coat the chicken wings with a mixture of flour (diluted with water) and then roll them in the dry breading mix. Repeat this process twice to ensure a crispy coating.
  3. Frying:

    • Heat cooking oil in a pan over medium heat. Fry the breaded chicken wings until they turn golden brown and crispy. Remove and drain on paper towels.
  4. Making the Sauce:

    • In a separate pan, heat a little oil over medium heat. Add the chopped garlic and sauté until fragrant.
    • Add the sweet chili sauce, chili sauce, and tomato ketchup. Stir well to combine.
  5. Seasoning the Sauce:

    • Season the sauce with ground black pepper, sugar, and salt to taste. Pour in a small amount of water to achieve the desired consistency.
    • Mix in the diluted cornstarch and cook until the sauce thickens. Adjust the seasoning as needed.
  6. Combining:

    • Pour the prepared sauce over the fried chicken wings. Toss to ensure the wings are evenly coated with the sauce.
  7. Serving:

    • Transfer the chicken wings to a serving dish. Garnish with chopped celery or fried shallots if desired.
