Fried Chicken (Ayam Goreng Tepung) Recipe

Ingredients:

  • 500 grams chicken (thighs or breasts, as preferred)
  • 5 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • To taste: Chicken bouillon powder
  • To taste: Salt
  • 1 large egg
  • For coating:
    • 5 tablespoons all-purpose flour (for extra crispiness, use a high-quality flour)
    • 1 tablespoon cornstarch
  • Oil for frying

Instructions:

  1. Marinate the Chicken:
    Begin by preparing the chicken. In a large bowl, combine the chicken pieces with the minced garlic, black pepper, chicken bouillon powder, and salt. Mix well to ensure that the chicken is evenly coated with the seasonings. Cover the bowl and refrigerate the mixture for several hours; ideally, let it marinate overnight to enhance the flavors. For a quicker option, marinate for at least 2 hours.

  2. Prepare the Coating:
    In a separate dish, mix together the all-purpose flour and cornstarch. Stir until thoroughly combined. This mixture will give the chicken its crispy coating.

  3. Coat the Chicken:
    Remove the marinated chicken from the refrigerator. Crack the egg into a small bowl and beat it lightly. Add the beaten egg to the chicken and mix well until the chicken is fully coated with the egg.

  4. Dredge in Flour Mixture:
    Take each piece of chicken and roll it in the flour and cornstarch mixture. Press the flour mixture onto the chicken, ensuring an even coating. For a particularly crispy texture, gently press and pinch the flour onto the chicken to create a textured coating.

  5. Fry the Chicken:
    Heat oil in a deep skillet or frying pan over medium-low heat. The oil should be hot but not smoking. Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches if necessary. Cook the chicken until it is golden brown and crispy, and the internal temperature reaches 165°F (74°C), about 8-12 minutes per side depending on the size of the pieces.

  6. Drain and Serve:
    Once the chicken is perfectly cooked and crispy, remove it from the oil and drain on paper towels. Serve hot for the best taste.
