Portabella and Gouda Burger with Garlic Mayo

Description

🌟 I prefer a good portabella mushroom sandwich to a typical veggie burger any day, and this one is excellent. It’s juicy, garlicky, and cheesy, and really quick. Try it on the grill in the summer, on grilled French bread with garden-fresh tomato … mmmmmmm! Prep time includes marinating mushrooms. 🌟

For Assembly:

  • 3-4 slices of gouda cheese 🧀
  • 1 tomato, sliced 🍅
  • 2 rolls or slices of French bread 🥖
  • Fresh thyme for garnish (optional) 🌿
  • Fresh parsley for garnish (optional) 🌿
  • Avocado slices (optional) 🥑

Instructions

Prep Time: 55 minutes | Cook Time: 10 minutes | Total Time: 1 hour 5 minutes

  1. Marinate the Mushrooms

    • In a zipper-lock bag, combine 2 tablespoons of olive oil, sliced garlic clove, and dried thyme.
    • Add the portabella mushroom caps, seal the bag, and gently massage the marinade into the mushrooms.
    • Let the mushrooms marinate in the refrigerator for at least 30 to 45 minutes, allowing all the flavors to meld beautifully. 🌟
  2. Prepare the Garlic Mayo

    • While the mushrooms are marinating, mix together the mayonnaise, lemon juice, minced garlic, dried thyme, and dried parsley in a small bowl.
    • Cover the bowl and place it in the refrigerator, allowing the flavors to blend and create a delicious garlic mayo spread. 🧄
  3. Cook the Mushrooms

    • Heat a tablespoon of olive oil in a skillet over medium heat.
    • Once hot, add the marinated mushroom caps, stem side down, along with as much of the sliced garlic and thyme from the marinade as possible.
    • Sauté the mushrooms for about 5 minutes until they begin to soften and brown on the edges. 🍳
  4. Melt the Cheese

    • Flip the mushroom caps over and top each with slices of gouda cheese.
    • Cover the skillet with a lid and let the mushrooms cook for another 5 minutes, or until the cheese is melted and bubbly. Keep an eye on them as the cheese will melt quickly. 🧀
  5. Grill Option (if preferred)

    • Alternatively, you can grill the marinated mushrooms on an outdoor grill. Grill the mushrooms stem side down first for about 5 minutes, then flip, top with cheese, and grill until the cheese is melted. This adds a delightful smoky flavor to the mushrooms. 🌞
  6. Assemble the Burgers

    • Toast the rolls or French bread slices until golden brown.
    • Spread a generous amount of garlic mayo on the toasted bread.
    • Place the sautéed or grilled mushroom caps with melted cheese on the bread.
    • Top with fresh tomato slices.
    • Garnish with fresh thyme and parsley, if desired.
  7. Serve

    • These portabella and gouda burgers are delicious as is, but you can also serve them with a side of avocado slices for an extra creamy texture.
    • Enjoy this juicy, garlicky, cheesy delight as a perfect lunch or snack! 🍴🍅🧄
