Peanut Butter Krispies

These Peanut Butter Krispies are a cherished family favorite, lovingly handed down from my great-grandmother. While traditional marshmallow krispie treats might be the norm, this version, which predates them, offers a delightful twist. Perfect for those who prefer to skip marshmallows, these bars are both sweet and satisfying without being overwhelmingly sugary. If you’re inclined, a drizzle of melted chocolate can elevate these treats even further. The original recipe called for a full cup of sugar, but I found that halving it provided just the right balance of sweetness. Feel free to adjust to your taste!

Ingredients

  • 1/2 cup sugar
  • 1 cup corn syrup
  • 1 cup peanut butter
  • 6 cups rice krispies

Instructions

  1. Boil the Sugar and Corn Syrup: In a medium saucepan over medium heat, combine the sugar and corn syrup. Stir occasionally until the mixture reaches a rolling boil. Once boiling, remove the pan from the heat.

  2. Add Peanut Butter: Immediately stir in the peanut butter until the mixture is smooth and fully combined.

  3. Incorporate Rice Krispies: Add the rice krispies to the peanut butter mixture. Stir gently but thoroughly to ensure the cereal is evenly coated with the mixture.

  4. Press into Pan: Pour the mixture into a greased 9×13-inch pan. Use a spatula or your hands to press the mixture evenly into the pan, creating a compact layer.

  5. Cool and Cut: Allow the mixture to cool completely in the pan. Once cooled, cut into squares and enjoy!
