Indulge in a delightful twist on the classic Indonesian dish with this Ayam Geprek Kol, featuring crispy fried chicken paired with savory fried tofu, crunchy cabbage, and a spicy sambal. This recipe is perfect for those who crave a hearty, flavorful meal with a touch of spice. Here’s how to create this mouthwatering dish:
Ingredients:
- 1 boneless, skinless chicken breast, fried until crispy
- 1 piece of fried tofu
- 5 large cabbage leaves, cleaned and sliced into wide strips
- 2 shallots
- 2 cloves garlic
- 20 bird’s eye chilies (cabe rawit)
- Salt, to taste
- Sugar, to taste
- Vegetable oil, for frying
- 2 cucumber slices
- Fresh basil leaves, for garnish
Instructions:
-
Prepare the Cabbage:
- Heat oil in a pan over medium heat. Fry the cabbage strips until the edges turn golden brown and crispy. Remove from the pan and drain on paper towels to remove excess oil.
-
Make the Sambal:
- In a mortar and pestle (cobek), combine the garlic, shallots, and bird’s eye chilies. Grind until you achieve a coarse paste. Add salt and sugar to taste. Heat a small amount of oil in a separate pan and pour it over the sambal mixture, stirring to combine. Set the sambal aside.
-
Assemble the Dish:
- Place the crispy fried chicken and tofu pieces in the mortar and gently crush them together with the sambal until the mixture is well combined. Alternatively, you can use a large bowl for this step.
- Arrange the fried cabbage on a serving plate, then top with the sambal-covered chicken and tofu mixture.
-
Garnish and Serve:
- Garnish with cucumber slices and fresh basil leaves for a refreshing contrast to the spicy sambal.
- Serve immediately while hot and enjoy this flavorful and crispy delight!
Note: Adjust the amount of bird’s eye chilies according to your preferred level of spiciness. This dish is best enjoyed fresh, making it a perfect choice for a vibrant and satisfying meal.
