Ingredients:

  • 1 boneless, skinless chicken breast, fried until crispy
  • 1 piece of fried tofu
  • 5 large cabbage leaves, cleaned and sliced into wide strips
  • 2 shallots
  • 2 cloves garlic
  • 20 bird’s eye chilies (cabe rawit)
  • Salt, to taste
  • Sugar, to taste
  • Vegetable oil, for frying
  • 2 cucumber slices
  • Fresh basil leaves, for garnish

Instructions:

  1. Prepare the Cabbage:

    • Heat oil in a pan over medium heat. Fry the cabbage strips until the edges turn golden brown and crispy. Remove from the pan and drain on paper towels to remove excess oil.
  2. Make the Sambal:

    • In a mortar and pestle (cobek), combine the garlic, shallots, and bird’s eye chilies. Grind until you achieve a coarse paste. Add salt and sugar to taste. Heat a small amount of oil in a separate pan and pour it over the sambal mixture, stirring to combine. Set the sambal aside.
  3. Assemble the Dish:

    • Place the crispy fried chicken and tofu pieces in the mortar and gently crush them together with the sambal until the mixture is well combined. Alternatively, you can use a large bowl for this step.
    • Arrange the fried cabbage on a serving plate, then top with the sambal-covered chicken and tofu mixture.
  4. Garnish and Serve:

    • Garnish with cucumber slices and fresh basil leaves for a refreshing contrast to the spicy sambal.
    • Serve immediately while hot and enjoy this flavorful and crispy delight!
