Simple Chicken and Egg Stir-Fry

Ingredients:

  • 1/4 pound boneless chicken breast, diced
  • 1 egg, beaten
  • 1/2 tablespoon soy sauce
  • Fresh seaweed (chukawakame), optional
  • 2 shallots, finely chopped
  • For the Marinade:
    • 1 teaspoon salt
    • 2 teaspoons black pepper
    • 5 tablespoons water

Instructions:

  1. Prepare the Ingredients: Begin by gathering all your ingredients. For the chicken, mix the salt, black pepper, and water to create a marinade. Toss the diced chicken in the marinade and let it sit for about 15 minutes to absorb the flavors.

  2. Sauté the Shallots: Heat a pan over medium heat and add a splash of oil. Once the oil is hot, add the finely chopped shallots. Sauté until they become fragrant and slightly golden.

  3. Cook the Chicken: Add the marinated chicken (discarding any excess marinade) to the pan with the shallots. Stir-fry the chicken, cooking until it changes color and is fully cooked through.
