Ingredients:
- 1/4 chicken (cut into small pieces)
- 1/2 onion
- 2 cloves garlic
- 3 shallots
- 2 red chilies
- Sweet soy sauce, to taste
- 2 teaspoons oyster sauce
- Granulated sugar or palm sugar, to taste
- Salt, to taste
- Flavor enhancer, to taste
- Ground black pepper, to taste
- 1 stalk green onion
- 1 bay leaf
- 1 piece galangal
- 1 kaffir lime leaf (optional)
- Water, as needed

Prepare the Chicken:
- Fry or boil the chicken pieces until they are half-cooked. Set aside to drain.

Sauté the Aromatics:
- In a large pan, sauté the sliced onion, garlic, shallots, and red chilies along with the bay leaf, kaffir lime leaf (if using), and galangal until fragrant.
