Dinner Trio: Sautéed Bok Choy, Garlic Chicken, and Sautéed Shallots

Ingredients:

⭐️ Sautéed Bok Choy:

  • 4 stalks bok choy
  • 2 cloves garlic, thinly sliced
  • 1/2 teaspoon soy sauce
  • 1 tablespoon water
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

⭐️ Garlic Chicken:

  • 2 chicken thighs, diced
  • 1 teaspoon sweet soy sauce (kecap manis)
  • 1/2 teaspoon soy sauce
  • 8 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon mushroom stock (optional, adjust to taste)
  • 1 lime, juiced

⭐️ Sautéed Shallots:

  • 15 shallots
  • 3 green chilies
  • 5 red chilies
  • 5 bird’s eye chilies (cabe rawit)
  • 1/2 teaspoon salt
  • 1/2 teaspoon mushroom stock (optional, adjust to taste)
  • 4-5 tablespoons cooking oil

Instructions:

⭐️ Sautéed Bok Choy:

  1. Wash and cut the bok choy into bite-sized pieces.
  2. Heat a pan over medium heat and add the sliced garlic. Sauté until fragrant.
  3. Add the bok choy, soy sauce, water, sugar, and salt. Stir well and cook for about 30 seconds, or until the bok choy is tender yet crisp. Remove from heat.

⭐️ Garlic Chicken:

  1. In a bowl, combine the diced chicken, sweet soy sauce, soy sauce, crushed garlic, salt, pepper, and mushroom stock (if using). Marinate in the refrigerator for a few hours or overnight for best results.
  2. Heat a small amount of oil in a pan over medium heat. Add the marinated chicken and cook, stirring occasionally, until the chicken is cooked through and slightly caramelized, about 10-15 minutes.
  3. Squeeze the lime juice over the chicken and give it a final stir. Remove from heat.

  1. Thinly slice the shallots and slice the green chilies, red chilies, and bird’s eye chilies diagonally.

  3. Season with sugar, salt, and mushroom stock (if using). Stir well and taste. Adjust the seasoning if needed. Cook until the shallots are caramelized and the flavors are well combined. Remove from heat.
