Crispy Ayam Geprek with Spicy Garlic Chili Sauce

Ayam Geprek Huhah

Ingredients:

  • 1 kg chicken (breast, cut into 8 pieces)
  • Bird’s eye chili peppers
  • Garlic
  • All-purpose flour
  • 1 egg
  • Oil for frying
  • Salt, to taste
  • Seasoning, to taste

Instructions:

  1. Prepare the Chicken: Begin by washing the chicken pieces thoroughly. Next, boil the chicken until fully cooked. Once done, set aside to cool.

  2. Prepare the Coating: Divide the all-purpose flour into two bowls. In one bowl, add the egg and mix well to create a wet batter. In the other bowl, keep the flour dry for coating.

  3. Coat the Chicken: After the chicken has cooled, dip each piece into the wet batter, allowing any excess to drip off. Then, roll the chicken in the dry flour, ensuring each piece is thoroughly coated. Gently press the flour into the chicken to ensure an even coating.

  4. Fry the Chicken: Heat oil in a pan over medium heat. Fry the coated chicken pieces until they turn golden brown and crispy. Remove the chicken from the oil and drain on paper towels to remove excess oil.

  5. Prepare the Sambal: While the chicken is frying, prepare the sambal. Boil the bird’s eye chili peppers and garlic until softened. Once cooked, grind them into a paste. Season with a pinch of salt and a bit of seasoning to taste.

  6. Combine and Serve: Once the chicken is fried, crush the pieces lightly with a pestle or the back of a spoon to “geprek” (smash). Mix the crushed chicken with the sambal, ensuring an even distribution. Serve immediately for the best flavor.
