Ingredients:

  • 1/2 kg chicken breast (boneless)
  • 300 grams shrimp (peeled and deveined)
  • 3 cloves garlic (minced)
  • 1 large egg
  • 1 carrot (grated)
  • 5 tablespoons tapioca flour
  • 2 tablespoons all-purpose seasoning flour
  • Salt (to taste)
  • Chicken seasoning (to taste)
  • Chopped celery (as needed)
  • Chopped green onions (as needed)
  • Spring roll wrappers (instant, for wrapping)
  • Topping: Grated carrot

Instructions:

  1. Prepare the Filling:

    • In a large mixing bowl, combine the finely ground chicken breast and shrimp. Add the tapioca flour, all-purpose seasoning flour, egg, minced garlic, salt, and chicken seasoning. Mix thoroughly until all ingredients are well combined and the mixture is smooth.
  2. Add Vegetables:

    • Gently fold in the grated carrot, chopped celery, and chopped green onions into the mixture. Ensure that the vegetables are evenly distributed. If the mixture appears too dry, add a small amount of water to achieve the desired consistency, but avoid making it too runny.
  3. Assemble the Siomay:

    • Take a spring roll wrapper and place a small spoonful of the filling mixture in the center. Fold the wrapper around the filling, pinching the edges to seal securely. You can shape them as desired, traditionally, the edges are pinched together to create a pouch. Top each dumpling with a bit of grated carrot for added color and texture.
  4. Steam the Siomay:

    • Prepare your steamer by lining the lid with a cloth to prevent condensation from dripping onto the dumplings. Preheat the steamer over medium-high heat. Once hot, arrange the siomay in the steamer basket, making sure they are not overcrowded. Steam for approximately 25-30 minutes, or until the dumplings are cooked through and firm to the touch.
  5. Storage:

    • If you have leftover siomay or wish to prepare them in advance, you can freeze them. Simply place the uncooked siomay on a baking sheet lined with parchment paper, freeze until solid, then transfer to a freezer bag for storage. When ready to cook, steam from frozen for a slightly longer time.
