Ayam Gemprek Sabel Bawang
Ingredients:
For the Chicken:
- 1/2 kg chicken wings
- 5 shallots
- 4 cloves garlic
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon salt
- 1/2 teaspoon MSG (optional)
- 1 thumb-sized piece of turmeric, peeled
- 2 bay leaves
- 2 kaffir lime leaves
- 1 stalk lemongrass, smashed
- 1 thumb-sized piece of galangal, smashed
- All-purpose flour
For the Sambal Bawang (Garlic Chili Sauce):

- 6 orange chili peppers
- 3 red chili peppers
- 1 clove garlic
- Salt, to taste
- MSG (optional)
- Vegetable oil (from frying the chicken)
Instructions:

Prepare the Chicken:
- Clean the chicken wings thoroughly.
- Blend the shallots, garlic, coriander seeds, turmeric, salt, and MSG (if using) into a smooth paste.
- Cook the chicken with the spice paste, bay leaves, kaffir lime leaves, lemongrass, and galangal. Use just enough water to cover the chicken, as this will help the flavors to infuse better and cook the chicken faster. Simmer until the chicken is cooked through and tender.
- Once cooked, remove the chicken from the pan and let it drain.

Prepare the Coating:
- Divide the all-purpose flour into two portions: one for dry coating and one for the wet batter.
- Mix water into the portion of flour to create a wet batter. Use some of the cooking liquid from the chicken to enhance the flavor of the batter. Stir until smooth, without lumps.
- Coat the cooked chicken first in the wet batter, then dredge in the dry flour. Ensure an even coating.

Fry the Chicken:
- Heat oil in a frying pan over medium heat.
- Fry the coated chicken wings until golden and crispy. Repeat until all the chicken is fried. Drain on paper towels.

Prepare the Sambal Bawang:
- Blend the orange chili peppers, red chili peppers, garlic, salt, and MSG (if using) into a smooth paste.
- Heat some vegetable oil (the same used for frying the chicken) in a pan and fry the chili paste until fragrant and slightly caramelized.

- Place the fried chicken wings on a serving plate.
- Spoon the sambal bawang over the chicken or serve on the side as a dipping sauce.
