Spicy Indonesian Green Chili Chicken Stir-Fry

Ayam Cabai Ijo (Indonesian Green Chili Chicken)

Ingredients:

  • 1/2 whole chicken, cut into pieces and pre-cooked until tender
  • 1 large onion, roughly chopped
  • 3 cloves garlic, coarsely chopped
  • 4 shallots, sliced thickly
  • 2 green chilies (adjust to taste)
  • 6 bird’s eye chilies (adjust to taste)
  • A few bay leaves
  • 1 stalk lemongrass, smashed
  • Oyster sauce, to taste
  • ABC Sweet and Spicy Soy Sauce, to taste
  • Salt, to taste
  • Ground black pepper, to taste

Instructions:

  1. Fry the Chicken: Heat oil in a pan over medium heat. Fry the chicken pieces briefly until they are golden brown. Remove from the pan and set aside.

  2. Sauté Aromatics: In the same pan, add the chopped onion, garlic, shallots, green chilies, and bird’s eye chilies. Sauté until the mixture becomes fragrant and the onions turn translucent.

  3. Combine Ingredients: Return the fried chicken to the pan. Add the oyster sauce, sweet and spicy soy sauce, salt, and ground black pepper. Stir well to coat the chicken with the sauce and spices.

  4. Adjust Seasoning: Taste the dish and adjust the seasoning if necessary. You can add additional seasoning or spices according to your preference.

  5. Finish Cooking: Add the bay leaves and smashed lemongrass. Stir and cook for a few more minutes until everything is well combined and heated through.

  6. Serve: Turn off the heat and transfer the dish to a serving plate. Serve hot, and enjoy with steamed rice or your favorite side dish.
