Rica Ayam Recipe
Ingredients:
- 3/4 kg chicken, cut into small pieces
- Spice Paste:
- 3 cloves garlic
- 5 shallots
- 5 bird’s eye chilies
- 3 red chilies
- 3 candlenuts
- Black pepper to taste
- Salt to taste
- 2 cm turmeric
- 2 cm ginger
- For Seasoning:
- 2 stalks lemongrass, bruised
- 2 cm galangal, bruised
- 2 bay leaves
- 2 kaffir lime leaves
- Palm sugar, shaved, to taste
- 1 tomato, thinly sliced
- Fried shallots, for garnish
- Flavor enhancer (optional), to taste
- Water, as needed

Prepare the Spice Paste:
Begin by blending the garlic, shallots, bird’s eye chilies, red chilies, candlenuts, turmeric, and ginger into a smooth paste. You can use a mortar and pestle or a food processor for this step. Add salt and black pepper to taste. -

Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil begins to separate from the paste. -

Incorporate Tomatoes:
Add the thinly sliced tomato to the pan. Continue to simmer the dish until the chicken is tender and the sauce has thickened to your liking. -
Final Adjustments:
Taste the dish and adjust the seasoning with additional salt or sugar if necessary. Allow the sauce to reduce to your preferred consistency. -
