Rica Ayam Recipe

Ingredients:

  • 3/4 kg chicken, cut into small pieces
  • Spice Paste:
    • 3 cloves garlic
    • 5 shallots
    • 5 bird’s eye chilies
    • 3 red chilies
    • 3 candlenuts
    • Black pepper to taste
    • Salt to taste
    • 2 cm turmeric
    • 2 cm ginger
  • For Seasoning:
    • 2 stalks lemongrass, bruised
    • 2 cm galangal, bruised
    • 2 bay leaves
    • 2 kaffir lime leaves
    • Palm sugar, shaved, to taste
    • 1 tomato, thinly sliced
    • Fried shallots, for garnish
    • Flavor enhancer (optional), to taste
    • Water, as needed

Instructions:

  1. Prepare the Spice Paste:
    Begin by blending the garlic, shallots, bird’s eye chilies, red chilies, candlenuts, turmeric, and ginger into a smooth paste. You can use a mortar and pestle or a food processor for this step. Add salt and black pepper to taste.

  2. Sauté the Spice Paste:
    Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil begins to separate from the paste.

  3. Add Aromatics:
    Incorporate the bruised lemongrass, galangal, bay leaves, and kaffir lime leaves into the pan. Continue to sauté for a few minutes until the aromatics are well blended with the spice paste.

  4. Cook the Chicken:
    Add the chicken pieces to the pan, stirring to coat them evenly with the spice paste. Cook until the chicken is no longer pink and starts to brown slightly.

  5. Add Liquid and Simmer:
    Pour in enough water to cover the chicken. Stir in the shaved palm sugar and flavor enhancer (if using). Bring the mixture to a boil, then reduce the heat and let it simmer.

  6. Incorporate Tomatoes:
    Add the thinly sliced tomato to the pan. Continue to simmer the dish until the chicken is tender and the sauce has thickened to your liking.

  7. Final Adjustments:
    Taste the dish and adjust the seasoning with additional salt or sugar if necessary. Allow the sauce to reduce to your preferred consistency.

  8. Serve:
    Once the dish is ready, transfer it to a serving platter. Garnish with fried shallots for added texture and flavor.
