Tumis Ayam Bumbu Kuning (Sautéed Chicken in Yellow Spices)
Ingredients:
- 250 grams chicken breast fillet
- 1/4 head cabbage
- 2 carrots
- 3 stalks green onions
- Spice Paste:
- 4 shallots
- 4 cloves garlic
- 2 cm turmeric root
- 2 cm ginger
- 1 slice galangal
- 5 chilies (adjust to taste)
- Salt, to taste
- Ground black pepper, to taste
- Sugar, to taste
- Optional: seasoning powder, to taste
- Water, as needed
- Cooking oil
Instructions:
-
Prepare the Spice Paste:
- Peel and chop the shallots, garlic, turmeric root, ginger, and galangal. Blend these ingredients along with the chilies into a smooth paste. You can use a food processor or mortar and pestle for this.
-
Sauté the Spice Paste:
- Heat a generous amount of cooking oil in a skillet over medium heat. Add the prepared spice paste and sauté, stirring frequently, until it becomes fragrant and the oil starts to separate from the paste. This process should take about 5-7 minutes.
-
Cook the Spice Paste:
- Pour a small amount of water into the skillet with the spice paste. Stir well and let it simmer until it starts to boil. This helps to meld the flavors together and develop a rich base for the dish.
-
Season the Dish:
- Season the simmering spice paste with salt, sugar, ground black pepper, and optional seasoning powder. Mix thoroughly to ensure the spices are evenly distributed.
-
Add the Chicken:
- Cut the chicken breast fillet into bite-sized pieces. Add the chicken to the skillet and stir to coat the pieces with the spice paste. Cook until the chicken is thoroughly cooked and the flavors are well absorbed.
-
Incorporate the Vegetables:
- Slice the cabbage, carrots, and green onions. Add these vegetables to the skillet. Sauté until the vegetables are tender but still crisp. Be careful not to overcook the vegetables; they should retain some crunch for the best texture.
-
Adjust Seasoning:
- Taste the dish and adjust the seasoning if needed. Add more salt, sugar, or pepper according to your preference.
-
Serve:
- Once the chicken is cooked through and the vegetables are done, remove from heat. Serve the Tumis Ayam Bumbu Kuning hot with steamed rice or your favorite side dishes.
