Spicy Crispy Chicken and Mushroom with Oyster Sauce

Ingredients:

  • 20 button mushrooms
  • 2 chicken breasts, filleted
  • Spice Blend:
    • 3 shallots
    • 2 cloves garlic
    • 1 small onion
    • 25 bird’s eye chilies
  • Additional Seasoning:
    • Salt
    • Sugar
    • Seasoning powder
    • 1 packet oyster sauce

Instructions:

  1. Preparation:

    • Slice the chicken breasts into bite-sized pieces and clean the button mushrooms.
  2. Coating and Frying Chicken:

    • Dredge the chicken pieces in a seasoned flour mixture.
    • Heat oil in a pan and fry the chicken until golden brown and crispy. Set aside.
  3. Preparing the Spice Blend:

    • Finely chop the shallots, garlic, and onion. Slice the bird’s eye chilies.
  4. Cooking the Vegetables:

    • In a separate pan, heat a small amount of oil.

  5. Combining Ingredients:

    • Add the mushrooms to the pan with the sautéed spices. Pour in a little water and cook until the mushrooms are tender.
  6. Final Assembly:

    • Add the fried chicken pieces to the pan.
    • Pour in the oyster sauce and mix well.
    • Adjust seasoning with salt, sugar, and seasoning powder to taste.
  7. Serve:

    • Stir everything together until well combined and heated through.
