Fu Yung Hai Ayam Recipe

Ingredients:

For the Fu Yung Hai:

  • 5 large eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tapioca flour
  • 2 green onions, finely chopped
  • 1 medium carrot, julienned
  • 100 grams cooked chicken, shredded
  • 1 cup cabbage, thinly sliced
  • Salt, sugar, and seasoning to taste
  • Oil, for frying

For the Sauce:

  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 4 tablespoons tomato ketchup
  • 1 tablespoon oyster sauce
  • 1 teaspoon sweet soy sauce
  • 1 teaspoon vinegar
  • 1 cup cauliflower florets
  • 1 medium carrot, thinly sliced
  • 250 ml water
  • Salt, sugar, pepper, and seasoning to taste
  • Cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) for thickening

Instructions:

  1. Prepare the Sauce:

    • Heat a tablespoon of oil in a pan over medium heat. Add the minced garlic and sliced onion, cooking until fragrant and softened.
    • Stir in the tomato ketchup, oyster sauce, sweet soy sauce, and vinegar. Mix well.
    • Pour in the water, and add the cauliflower florets and sliced carrot. Bring to a simmer.
    • Season with salt, sugar, pepper, and your choice of seasoning. Adjust to taste, balancing the sweet and sour flavors.
    • To thicken the sauce, gradually add the cornstarch slurry, stirring continuously until the sauce reaches your desired consistency. Set aside.
  2. Prepare the Fu Yung Hai:

    • In a large bowl, combine the eggs, all-purpose flour, tapioca flour, chopped green onions, julienned carrot, shredded chicken, and sliced cabbage. Season with salt, sugar, and seasoning to taste. Mix until well combined.
    • Heat a generous amount of oil in a frying pan over medium heat. Pour in the egg mixture, spreading it evenly in the pan. Cook until the edges start to set and turn golden brown, then carefully flip and cook the other side until fully cooked and crispy.
    • Remove from the pan and drain on paper towels.
  3. Serve:

    • Slice the Fu Yung Hai into portions and serve with the prepared sauce drizzled on top or on the side for dipping.
