Semur Kering Telur dan Kentang: A Delicious Indonesian Stew

Ingredients:

  • 2-4 large eggs
  • 2 medium potatoes
  • 3 shallots
  • 3 cloves of garlic
  • A handful of candlenuts (kemiri)
  • 3 red chilies (adjust to taste)
  • Water (as needed)
  • Granulated sugar (to taste)
  • Ground pepper (to taste)
  • Seasoning (to taste)
  • Sweet soy sauce (kecap manis) (to taste)
  • 1 bay leaf

Instructions:

  1. Prepare the Eggs and Potatoes:

    • Peel and cut the potatoes into chunks according to your preference.
    • Place the potatoes and eggs in a pot of water and bring to a boil. Cook until the potatoes are tender and the eggs are hard-boiled.
  2. Prepare the Spice Paste:

    • While the potatoes and eggs are boiling, finely grind the shallots, garlic, red chilies, candlenuts, and ground pepper. This spice paste will be the base of your flavor.
  3. Fry the Potatoes and Eggs:

    • Once the potatoes are tender and the eggs are cooked, peel the eggs.
    • Briefly fry the potatoes and eggs in hot oil until they are slightly golden. This step adds a wonderful texture and flavor to the final dish.
  4. Cook the Spice Paste:

    • Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the raw smell is gone.
    • Add the bay leaf to the pan and stir briefly.
  5. Combine and Simmer:

    • Pour in enough water to cover the potatoes and eggs. Bring the mixture to a boil.
    • Add the fried potatoes and eggs to the pan.
    • Pour in sweet soy sauce (kecap manis) to taste. Stir to combine all the ingredients.
  6. Season and Reduce:

    • Add granulated sugar and seasoning to taste. Adjust the flavors to your preference.
    • Allow the stew to simmer, uncovered, stirring occasionally, until the liquid has mostly evaporated and the flavors are well absorbed into the potatoes and eggs.
  7. Serve:

    • Once the sauce is reduced and thickened, your Semur Kering Telur dan Kentang is ready to serve. Enjoy this flavorful dish as a delightful accompaniment to your meal!

This recipe brings together the rich, savory flavors of Indonesian cuisine with a satisfying blend of spices and ingredients. Perfect for those who enjoy a hearty, flavorful dish with a touch of sweetness and spice.
