Telor Sambal Ebi

Ingredients:

  • 4 eggs
  • 5 shallots
  • 2 garlic cloves
  • 5 bird’s eye chilies
  • 1 stalk of lemongrass, bruised
  • Ground black pepper
  • Salt
  • Sugar
  • Dried shrimp (ebi)

Steps:

  1. Prepare the Eggs: Start by boiling the eggs until they are fully cooked. Once done, peel them and set aside. Heat oil in a pan and fry the peeled eggs until they are golden brown and crispy. Remove from the pan and set aside.

  2. Prepare the Sambal: Finely grind the shallots, garlic, and bird’s eye chilies together to create a smooth paste. Heat some oil in a pan and sauté the paste until it becomes aromatic and the raw smell dissipates.

  3. Cook with Aromatics: Add the bruised lemongrass and dried shrimp to the pan. Season the mixture with salt, ground black pepper, and a touch of sugar to balance the flavors. Stir well to combine.

  4. Combine and Simmer: Gently add the fried eggs to the pan, ensuring they are well-coated with the sambal mixture. If needed, add a small amount of water to help the flavors infuse into the eggs. Stir gently to mix everything together.

  5. Serve: Once the sambal has fully absorbed into the eggs and everything is well combined, remove from heat. Serve hot and enjoy this flavorful dish.

This recipe for Telor Sambal Ebi offers a delicious combination of spicy sambal and crispy fried eggs, making for a delightful and savory dish that’s perfect for any meal.
