Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients:

  • 700 grams ripe tomatoes, chopped
  • 2 bay leaves
  • 2 shallots, finely chopped
  • 1 leek, cleaned and sliced
  • 1 clove garlic, minced
  • 1/2 to 1 teaspoon chili flakes (adjust to your heat preference)
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon tomato paste
  • 1 teaspoon ground coriander
  • 1 liter chicken stock
  • 1 tablespoon cornflour (cornstarch)
  • 2 tablespoons cold water
  • Cream for garnish (optional)

Instructions:

  1. Heat the Oil: Begin by heating a drizzle of oil in a medium pot over medium heat. Once the oil is hot, add the chopped tomatoes, shallots, leek, and bay leaves. Cook gently for a few minutes, stirring occasionally, until the shallots become translucent and the mixture starts to release its aromatic flavors. Be careful not to let the vegetables brown.

  2. Add Flavors: Stir in the minced garlic, chili flakes, black pepper, and salt to taste. Incorporate the tomato paste and ground coriander into the tomato mixture, ensuring everything is well combined.

  3. Incorporate the Stock: Pour in the chicken stock, stirring to combine all the ingredients. Increase the heat and bring the mixture to a boil.

  4. Simmer: Once boiling, reduce the heat to a low simmer. Allow the soup to cook for 15-20 minutes, letting the flavors meld together and the soup to slightly thicken.

  5. Prepare Cornflour Mixture: While the soup is simmering, mix the cornflour with 2 tablespoons of cold water in a small bowl. This will create a slurry that will help thicken the soup.

  6. Blend the Soup: Remove the pot from heat and carefully blend the soup using an immersion blender until you reach your desired consistency. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a countertop blender.

  7. Thicken the Soup: Return the blended soup to the heat. Gradually stir in the cornflour mixture, continuing to cook over gentle heat for about 2-3 minutes, or until the soup has thickened to your liking.

  8. Garnish and Serve: Ladle the soup into bowls. If desired, garnish with a swirl of cream for added richness and a touch of elegance.
