Telur Ceplok Balado Recipe

Ingredients:

  • 6 large eggs
  • Salt, to taste
  • Sugar, to taste
  • White pepper, to taste
  • 2 bay leaves
  • 1 stalk lemongrass
  • Cooking oil, as needed

For the Spice Paste:

  • 5 shallots
  • 4 garlic cloves
  • 8 large red chilies
  • 5 bird’s eye chilies
  • 1 tomato

Instructions:

  1. Prepare the Eggs: Heat oil in a frying pan and fry the eggs until the whites are crispy and golden. Set them aside on a paper towel to drain excess oil.

  2. Prepare the Spice Paste: Blend the shallots, garlic, red chilies, bird’s eye chilies, and tomato into a smooth paste.

  3. Cook the Spice Paste: In the same pan, heat a little more oil if needed. Add the blended spice paste, bay leaves, and lemongrass. Sauté until fragrant and the oil begins to separate from the paste.

  4. Combine and Season: Gently place the fried eggs into the pan with the spice paste. Add a splash of water to create a sauce. Season with salt, sugar, and white pepper to taste. Adjust seasoning as needed.

  5. Simmer and Serve: Allow the mixture to simmer for a few minutes until the eggs are well coated with the spice paste and the flavors meld together. Serve hot.
